The Six Bells hotel will feature a restaurant and tavern called The Feathers, which will offer a menu rooted in early-American and traditional country cookery. Guests can expect a blend of simple, hearty dishes inspired by regional history and tradition.

The restaurant and menu are being developed with consulting chef Molly Levine, the chef-owner of Westerly Canteen in the Hudson Valley, who worked at Chez Panisse before operating restaurants on the east coast, including Carissa’s in East Hampton and Troutbeck in nearby Amenia, New York.
